Chocolate Chippers (Chocolate Chunk Cookies)

It’s hard to think of a more iconic baked good than the chocolate chip cookie, which has seen countless variations over time. But once you try these chocolate chippers, which have their roots in the classic Joy of Cooking Cookbook, you’ll understand why it’s a go-to recipe for so many.

What makes these chocolate chippers so good?

If you like a soft and chewy chocolate chip cookie, this recipe is for you. By carefully selecting and mixing ingredients, it’s easy to develop the crispy, perfectly baked exterior while maintaining the tender center with gooey chocolate chunks. Their substantial size makes them filling as a snack – but no one will judge if you grab a few instead!

Why you’ll love this recipe

The allure of these chocolate chippers is their simplicity and flavor. They’re ready in under half an hour, including just 10-12 minutes in the oven. Meanwhile, all of the ingredients (other than the egg) are affordable and long-lasting pantry staples.

Ingredients

Here is what you need to make this chocolate chip cookie recipe:

  • Shortening
  • Granulated Sugar
  • Light Brown Sugar
  • Egg
  • Vanilla
  • All-purpose flour
  • Salt
  • Baking Soda
  • Semisweet Chocolate Chips or Chunks

Why use shortening?

While many bakers may default to the luscious flavor of butter or the convenience of vegetable oils, shortening is the ideal choice for these chocolate chippers. It has a higher melting point than other fats, allowing the cookies to maintain their shape longer during baking. This leads to a softer, chewier center.

Shortening is also more convenient to bake with since it’s easy to manipulate immediately, rather than needing time to soften like butter. Some also believe using shortening instead of butter extends the life of the cookies, keeping them from going stale as quickly.

How to make chocolate chippers

Those who’ve made cookies before won’t find anything too surprising in this recipe:

  • In a large bowl, cream together shortening, sugars, egg, and vanilla until light and fluffy.
  • Use a spoon or whisk to combine the flour, salt, and baking soda in a separate bowl.
  • Add flour mixture to the shortening mixture. Stir until well combined.
  • Stir in chocolate chips.
  • Drop tablespoonfuls of dough onto cookie sheets lined with parchment paper or a silicone mat.
  • Bake at 375°F for 10 to 12 minutes.

Recipe variations

Outside of chocolate chips, nuts are among the most popular ingredients for cookies. Chopped walnuts are easy to add to this recipe. Start with about a half cup and adjust to your taste. Feel free to experiment with other nuts or mix-ins in a similar volume.

What goes well with the cookies

Of course, nothing pairs better with a chewy, fresh-baked chocolate chipper than a cold glass of milk. But coffee, tea, or hot cocoa are similarly good choices for those in the mood for a warm beverage instead. You can even indulge in a dessert wine or sweet liqueur if you’re of age.

To add a bit more substance to your snack, you can also enjoy your cookie with a scoop of ice cream or a piece or two of fresh fruit.

How to store

Storing leftover chocolate chipper cookies is a quick and straightforward process. First, allow the cookies to cool to room temperature. Then, store them in an airtight container or sealed bag at room temperature.

Those preserving their cookies for longer periods should freeze them instead. Arrange the cookies in a single layer on a baking sheet and place them in the freezer until frozen. Then, repackage them in a freezer-safe container or bag.

How long do chocolate chippers last?

For many, the biggest challenge may be not eating them all at once! But stored correctly at room temperature, these cookies will last five to seven days. In the freezer, they’ll be good for up to three months.
