In fact, cauliflower buffalo bites are 2B Mindset friendly. Cauliflower tends to take on the flavors of what it’s cooked with. That makes it a great veggie substitution for anything from chicken to rice.

For this dish, be sure that your florets are large enough to hold up to the breading while still maintaining their shape and texture. For example, if your florets are too small, they will get mushy on the inside, and the breading will overpower them.

Gluten Free Buffalo Cauliflower

Rather than dredging your buffalo bites in flour like standard wings, this one calls for Cassava or Almond Flour. You can even blend the two. This makes the recipe gluten-free!

Cassava flour really gives your 2B Mindset buffalo bites a nice crunch, similar to a fried buffalo wing, but almond flour can be a substitute if you are looking to fit this snack into Keto.

Buffalo Cauliflower Recipe

Finding recipes that fit into the 2B Mindset meal plan is not always easy. We tend to hold onto the recipes we enjoy and find it difficult to switch.

Buffalo wings are a great example. Buffalo wings are not terribly unhealthy. Crazy, right? Chicken is healthy, and buffalo sauce isn’t unhealthy…The point is replacing the chicken with cauliflower helps.

This is the mentality we need to adjust to when trying to get healthier and/or lose weight. Sure, buffalo chicken wings are a favorite; who doesn’t enjoy them? But there are alternatives that are just as tasty but healthier.

Preheat oven to 400 degrees and line a baking sheet with parchment paper.

Combine the flour, garlic powder, salt, and pepper in a large bowl.

In a separate large bowl, whisk the eggs together. Add the cauliflower florets and combine until the cauliflower is coated with egg.

Using a set of tongs or a fork, transfer the coated cauliflower to the flour mixture, being careful not to transfer too much extra egg.

Gently shake and stir cauliflower into the flour mixture until the cauliflower is coated completely.

Transfer the Buffalo Cauliflower to a serving dish and garnish with sliced green onion. It’s always optional to serve with a dairy-free ranch or dressing of your choice.
